Chemical constituents
Amaranth is rich in vitamins including vitamin A, vitamin K, vitamin B6,
vitamin C, riboflavin and minerals like calcium, iron, magnesium,
phosphorus, zinc, copper and manganese.
Uses
- Amaranth is a leafy vegetable consumed by most parts of the world. It
is a beautiful ornamental plant and in various cultures it is used in
exquisite ways.
- In Mexico it is popped/ toasted and mixed with sugar/ honey solution
to make a candy called alegria.
- In Mexico and Peru both use amaranth leaves as a vegetable either by
boiling or frying. In India it is known Rajeera which is used in sweet
dish laddoos which are similar to alegria.
- In Tamil Nadu state of India amaranth is consumed regularly as
favourite dish where it is steamed and mashed with light seasoning salt,
red chilies and cumin.
