Aniseeds contains a good amount of volatile oil, consisting of largely trans-anethole(70-90%) with estragole, anisic acid, b-caryophylline, anisal dehyde, linalool; the polymers of anethole, dianethole and photoanethole. It also contains fatty acids, sterols, proteins and carbohydrates.
